Cimarossa (chim-a-rosa) is Italian for “red hilltop,” so named for its red volcanic rock and dust soil. Grapes and olive trees grow side by side where not much else could thrive, on steep slopes rising to 2,300 ft in elevation. The grape clusters are small, the berries are tiny, and the flavors are oh so deep. Those who appreciate wines of structure, immense depth, and richness – which is to say those with the patience to decant or cellar – will dive into dark-fruit heaven with this bottle.
